Crunchy Spiced Nuts

This is an easy way to make mixed nuts much more interesting. This particular preparation is for sweet, warm spiced nuts, but you can adapt this recipe to any seasoning you like.

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Serves: 8 people

Ingredients:

1 egg white

¼ cup white sugar

1 teaspoon salt

½ teaspoon cayenne pepper

½ teaspoon cinnamon

½ teaspoon clove

½ teaspoon nutmeg

3 cups assorted nuts

Instructions:

In a clean metal bowl, whisk together all the ingredients except the nuts. Continue whisking until the entire mixture is bubbly and no clear liquid is left on the bottom. Fold in nuts and lay out on a sheet pan in one layer, preferably on a silicone mat.

Bake at 300 degrees for 10 minutes. Remove pan from oven and, using a spatula, scrape and turn the nuts, breaking up chunks. Return to oven for another 15 minutes, then scrape, turn, and pour nuts out onto a wire rack to cool. Nuts will be soft when warm but will crisp up as they cool.
